  • ¼ cup shredded cheese (optional but delicious — mozzarella or cheddar)
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 1 tbsp olive oil or avocado oil for frying

Completely diabetic-friendly, gluten-free, low-calorie, and keto.

👩‍🍳 Instructions

1️⃣ Prep the Cabbage

Shred the cabbage finely. You can use:

  • a knife
  • a mandoline
  • a food processor

Place in a bowl and sprinkle with a pinch of salt. Let it sit 5 minutes, then squeeze lightly to remove excess moisture.

2️⃣ Make the Egg Mixture

In a separate bowl, whisk together:

  • eggs
  • garlic powder
  • pepper
  • optional cheese
  • optional flour (helps crisp up the fritters)

3️⃣ Combine

Pour the egg mixture over the shredded cabbage (just like the photo).
Mix well until every strand is coated.

4️⃣ Fry Until Golden

Heat oil in a skillet.

Add spoonfuls of the cabbage mixture and flatten into small pancakes.
Cook 3–4 minutes per side, or until golden and crispy.

Transfer to a plate and let cool slightly.

🍽️ Serve With
