High-Protein Lemon Bars
High-Protein Lemon Bars
Almond shortbread, a thick lemon layer, and a dust of powdered sweetener
These are classic lemon bars, rebuilt. The crust is almond flour shortbread. The filling is lemon, eggs, Greek yogurt, and a little whey so each square hits 11g protein. They stack like the photo – pale crust, a thick yellow layer, and a snow of powdered sweetener on top.
About 45 minutes in the oven. Chill them before you cut or the filling will smear.
Why you’ll love these bars
- 11g protein each – snack or dessert that holds you
- Only 4g net carbs – no wheat flour, no sugar
- About 45 minutes, one 8-inch pan
- Sharp lemon, not a weak pudding layer
- Clean squares after a chill, like the photo
- Keep a week in the fridge
Health notes
- High protein: Eggs, Greek yogurt, and a scoop of whey in the filling.
- Low carb: Almond flour crust. Powdered erythritol, not sugar.
- Real lemon: Fresh juice and zest. Bottled juice tastes flat.
- Nine squares: One 8×8 pan.
Key element – bake the crust first, then the filling
A raw crust soaks and turns soggy. Blind-bake it until the edges just color, then pour the lemon mix. That is how you get the two clean layers in the photo – a shortbread base and a thick, set curd on top.
Ingredients
Crust
- 1 1/2 cups (150g) fine blanched almond flour
- 3 Tbsp powdered erythritol or monk fruit
- Pinch of salt
- 4 Tbsp (56g) cold butter, cubed
- 1 large egg white
Lemon filling
- 3 large eggs + 1 yolk
- 1/2 cup (120g) plain Greek yogurt
- 1/3 cup (30g) vanilla or unflavored whey protein
- 1/2 cup powdered erythritol
- 1/3 cup fresh lemon juice (about 2 lemons)
- 1 Tbsp lemon zest
- 1 Tbsp butter, melted
- Pinch of salt
Finish
- 1 to 2 Tbsp powdered erythritol, for dusting
Swaps
- No whey: Add 2 extra Tbsp Greek yogurt. Protein drops a few grams.
- Coconut flour crust: Use 1/3 cup coconut flour + 5 Tbsp butter + 1 egg. Press thin.
- Lime: Same juice and zest amounts. Color stays pale.
- Dairy-free: Coconut yogurt and coconut oil. Chill longer to set.
Instructions
| 1 | Heat the oven. Heat oven to 350 F (175 C). Line an 8×8 pan with parchment so the sides have overhang. You will lift the slab out to cut clean squares. |
| 2 | Make the crust. Mix almond flour, sweetener, and salt. Cut in the butter with a fork until it looks like damp sand. Stir in the egg white. Press firmly into the pan in an even layer. |
| 3 | Blind-bake. Bake 12 to 14 minutes until the edges just turn gold. The center should look set, not wet. Leave the oven on. |
| 4 | Whisk the filling. Whisk eggs, yolk, yogurt, whey, sweetener, lemon juice, zest, melted butter, and salt until smooth. No lumps of whey. Pour over the hot crust. |
| 5 | Bake, chill, cut. Bake 16 to 18 minutes until the center jiggles slightly but is not liquid. Cool 20 minutes on the counter, then chill at least 2 hours. Dust with powdered sweetener. Lift out and cut into 9 squares. |
Pro tips
- Fresh lemon only. Bottled juice makes a dull filling.
- Powdered sweetener in the filling. Granular stays gritty.
- Do not overbake. A slight jiggle sets as it chills. Overbake and it cracks.
- Wipe the knife between cuts for the clean stack in the photo.
- Dust just before you serve. The sweetener melts if it sits on a wet top.
