Creamy Parmesan Italian Sausage Soup

Nothing says fall like a warm, creamy bowl of Italian sausage soup. This Creamy Parmesan Italian Sausage Soup is rich, cozy, and packed with flavor—from savory sausage to tender pasta and wilted spinach, finished with plenty of Parmesan. Perfect for chilly nights and easy weeknight dinners.

🧄 Ingredients

  • 1 lb sweet Italian sausage
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1½ cups ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper, to taste
  • 4 cups fresh spinach, roughly chopped
  • 1 cup grated Parmesan cheese (plus more for garnish)
  • Fresh parsley, chopped (for garnish)

🥣 Directions

  1. Cook the sausage:
    Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up as it cooks. Remove and set aside.
  2. Sauté aromatics:
    In the same pot, add diced onion and cook until softened (about 5 minutes). Add garlic and cook 1–2 minutes until fragrant.
  3. Build the broth:
    Pour in chicken broth and bring to a boil. Stir in oregano, basil, red pepper flakes, salt, and pepper.
  4. Cook the pasta:
    Add ditalini and cook until al dente according to package directions.
  5. Make it creamy:
    Reduce heat to low. Stir in heavy cream, then add spinach and cook just until wilted.
  6. Finish the soup:
    Return sausage to the pot. Stir in Parmesan until melted and creamy.
  7. Serve:
    Ladle into bowls and garnish with extra Parmesan and fresh parsley.
