Ingredients (Serves 6)

  • 1 ½ lbs lean ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 small head green cabbage, chopped (about 6–7 cups)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or chicken broth
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion and garlic; cook 2–3 minutes until softened.
  3. Stir in chopped cabbage, diced tomatoes, broth, paprika, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat. Cover and simmer 20–25 minutes until cabbage is tender.
