Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil or avocado oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth (low sodium)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp dried thyme or Italian seasoning
  • Salt and black pepper to taste
  • 1 tbsp butter (optional, for richer gravy)

Instructions

  1. Season chicken breasts on both sides with paprika, garlic powder, salt, and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add sliced onion and cook 4–5 minutes until softened. Add garlic and cook 30 seconds.
  4. Pour in chicken broth, scrape up any browned bits, and add thyme. Simmer 2–3 minutes.
  5. Return chicken to the skillet. Cover and simmer on medium-low for 8–10 minutes until chicken is cooked through (165°F internal temperature).
