Ingredients (Serves 4)

  • 1 lb lean ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning (sugar-free) or Italian seasoning
  • 1 cup diced bell peppers (red, yellow, green)
  • ½ cup diced tomatoes (no sugar added) or sugar-free salsa
  • 1 ½ cups shredded mozzarella or Mexican blend cheese
  • Salt and black pepper to taste
  • Optional: extra sliced peppers for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Place 4 oven-safe foil cups or ramekins on a baking sheet.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion and garlic; cook 2–3 minutes. Stir in seasoning, diced peppers, and tomatoes. Simmer 3–4 minutes.
  4. Divide the mixture evenly among the foil cups.
  5. Top each with shredded cheese.
  6. Bake for 12–15 minutes until the cheese is melted and bubbly.
  7. Garnish with extra pepper slices if desired and serve hot.
