Ingredients (Serves 8)

Crust

  • 1½ cups almond flour
  • ¼ cup cocoa powder
  • 3 tbsp melted butter
  • 2 tbsp powdered erythritol or monk fruit
  • Pinch of salt

Filling

  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • ½ cup powdered erythritol or monk fruit
  • 1 scoop vanilla or unflavored whey protein powder
  • 1 tsp vanilla extract

Chocolate Topping

  • ¾ cup sugar-free chocolate chips
  • ⅓ cup heavy cream

Instructions

  1. Mix almond flour, cocoa powder, melted butter, sweetener, and salt. Press firmly into the bottom of an 8×8 or 9-inch pan. Chill while making filling.
  2. Beat cream cheese, sweetener, protein powder, and vanilla until smooth. In a separate bowl, whip heavy cream to stiff peaks. Fold into cream cheese mixture.
  3. Spread filling evenly over the crust. Smooth the top.
  4. Heat heavy cream until just simmering, pour over chocolate chips, let sit 1 minute, then stir until smooth. Pour over the filling and spread evenly.
  5. Refrigerate for at least 4 hours or overnight until fully set.
  6. Slice and serve chilled.
