Ingredients (Makes 16–18 meatballs / Serves 4)

  • 1 lb ground chicken (or turkey)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp almond flour (or crushed pork rinds)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley
  • Optional: ½ cup sugar-free marinara for serving
  • Extra mozzarella for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment and lightly grease.
  2. In a large bowl, mix ground chicken, mozzarella, Parmesan, egg, almond flour, garlic, Italian seasoning, oregano, salt, pepper, and parsley until just combined. Do not overmix.
  3. Form into 16–18 meatballs (about 1½ inches each) and place on the prepared baking sheet.
  4. Bake for 18–22 minutes until cooked through and golden on the outside.
  5. Optional: In the last 3 minutes, top with a little extra mozzarella and return to oven until melted.
  6. Serve warm with sugar-free marinara if desired.
