High-Protein Chocolate Chip Cookies

Ingredients (Makes 12 cookies)

  • 1½ cups almond flour
  • ⅓ cup vanilla or unflavored whey protein powder
  • ½ tsp baking soda
  • Pinch of salt
  • ⅓ cup butter or coconut oil, softened
  • ⅓ cup allulose or preferred sugar-free sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup sugar-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together almond flour, protein powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and sweetener until light. Beat in the egg and vanilla.
  4. Add the dry ingredients to the wet and mix until a dough forms. Fold in the chocolate chips.
  5. Scoop dough into 12 equal balls and place on the baking sheet. Slightly flatten each one.
  6. Bake for 10–12 minutes until the edges are golden (centers may look slightly underdone — they firm up as they cool).
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
