High-Protein Seared Scallops in Creamy Sauce

Ingredients (Serves 3–4)

  • 1 lb (450g) large sea scallops, patted very dry
  • 3 tbsp butter or olive oil, divided
  • 3 garlic cloves, minced
  • ¾ cup heavy cream
  • ¼ cup chicken or seafood broth
  • 2 tbsp grated Parmesan (optional)
  • 1 tbsp fresh lemon or lime juice
  • 2 tbsp chopped fresh parsley
  • Salt and black pepper to taste
  • Optional: pinch of red pepper flakes or paprika
  • Lime wedges for serving

Instructions

  1. Pat scallops completely dry with paper towels and season both sides with salt and pepper.
  2. Heat 2 tbsp butter or oil in a large skillet over medium-high heat until very hot. Add scallops in a single layer (do not overcrowd). Sear 2–2½ minutes per side until deeply golden. Remove and set aside.
  3. Reduce heat to medium. Add remaining butter and garlic; cook 30 seconds until fragrant.
  4. Pour in heavy cream and broth. Simmer 2–3 minutes until slightly thickened. Stir in Parmesan (if using), lemon/lime juice, and most of the parsley. Season to taste.
  5. Return scallops to the pan and spoon the sauce over them. Cook 30–60 seconds just to warm through.
  6. Garnish with remaining parsley and serve immediately with lime wedges.
