Ingredients (Serves 3–4)
- 1 lb (450g) large sea scallops, patted very dry
- 3 tbsp butter or olive oil, divided
- 3 garlic cloves, minced
- ¾ cup heavy cream
- ¼ cup chicken or seafood broth
- 2 tbsp grated Parmesan (optional)
- 1 tbsp fresh lemon or lime juice
- 2 tbsp chopped fresh parsley
- Salt and black pepper to taste
- Optional: pinch of red pepper flakes or paprika

Instructions
- Pat scallops completely dry with paper towels and season both sides with salt and pepper.
