- 1½ cups (150g) almond flour
- ⅓ cup (35g) unflavored or chocolate whey protein powder
- ¼ cup ground flaxseed
- 2 tbsp chia seeds or mixed seeds
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 4 large eggs
- ¼ cup olive oil or melted butter
- ⅓ cup unsweetened almond milk
- 1 tbsp apple cider vinegar
- 1–2 tbsp unsweetened cocoa powder (for dark color)
- Optional: 1–2 tsp allulose if slight sweetness is desired
Instructions
- Preheat oven to 350°F (175°C). Line a small loaf pan with parchment paper.
- In a large bowl, mix almond flour, protein powder, ground flaxseed, seeds, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, whisk eggs, oil, almond milk, and vinegar until well combined.
- Pour the wet ingredients into the dry and mix until a thick batter forms.
- Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle extra seeds on top if desired.
- Bake for 40–50 minutes until a toothpick inserted in the center comes out clean and the top is firm.
- Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
