High-Protein Dark Seeded Bread

This is dense, flavorful dark seeded bread. A high-protein, low-carb loaf that’s soft inside, crusty on the outside, and perfect for toasting or sandwiches!

Ingredients (Makes 1 loaf / 12 slices)

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) unflavored or chocolate whey protein powder
  • ¼ cup ground flaxseed
  • 2 tbsp chia seeds or mixed seeds
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 4 large eggs
  • ¼ cup olive oil or melted butter
  • ⅓ cup unsweetened almond milk
  • 1 tbsp apple cider vinegar
  • 1–2 tbsp unsweetened cocoa powder (for dark color)
  • Optional: 1–2 tsp allulose if slight sweetness is desired

Instructions

  1. Preheat oven to 350°F (175°C). Line a small loaf pan with parchment paper.
  2. In a large bowl, mix almond flour, protein powder, ground flaxseed, seeds, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk eggs, oil, almond milk, and vinegar until well combined.
  4. Pour the wet ingredients into the dry and mix until a thick batter forms.
  5. Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle extra seeds on top if desired.
  6. Bake for 40–50 minutes until a toothpick inserted in the center comes out clean and the top is firm.
  7. Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
