High-Protein Cabbage Beef Soup

Ingredients (Serves 6)

  • 1 lb (450g) lean ground beef
  • 1 medium head green cabbage, chopped (about 6–7 cups)
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 3 garlic cloves, minced
  • 6 cups beef broth (low-sodium)
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • 1 tsp salt (or to taste)
  • 1–2 tbsp olive oil
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion, carrots, and garlic. Sauté for 3–4 minutes until softened.
  3. Stir in the chopped cabbage and cook for 4–5 minutes until it begins to wilt.
  4. Pour in the beef broth and diced tomatoes. Add paprika, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes until the cabbage is tender.
  6. Taste and adjust seasoning. Serve hot, garnished with fresh parsley if desired.
