High-Protein Keto Banana Bread

Ingredients (Makes 1 loaf / 10 slices)

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ¼ cup allulose or powdered sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 3 large eggs
  • ⅓ cup (75g) butter or coconut oil, melted
  • ½ cup mashed ripe banana (about 1 medium)
  • 1 tsp vanilla extract
  • ⅓ cup sugar-free chocolate chips
  • Optional: 2 tbsp heavy cream for extra moisture

Instructions

  1. Preheat oven to 350°F (175°C). Line a small loaf pan with parchment paper or use a foil pan.
  2. In a large bowl, mix almond flour, protein powder, sweetener, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk eggs, melted butter, mashed banana, and vanilla.
  4. Pour the wet ingredients into the dry and mix until just combined. Fold in the chocolate chips.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 40–50 minutes until a toothpick inserted in the center comes out clean and the top is golden.
  7. Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
