Ingredients (Makes 4 cups)
Crust Layer:
- ¾ cup almond flour
- 2 tbsp butter, melted
- 1 tbsp allulose or powdered sweetener
- Pinch of salt
Key Lime Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- ¾ cup full-fat Greek yogurt
- 1 scoop (30g) vanilla whey protein powder
- ⅓ cup allulose or powdered sweetener
- ¼ cup fresh key lime juice (or regular lime juice)
- 1 tsp lime zest
- 1 tsp vanilla extract
Topping:
- Sugar-free whipped cream
- Extra lime zest and thin lime slices
- Crushed sugar-free graham-style crumbs or toasted almond flour for garnish
Instructions
- Mix almond flour, melted butter, sweetener, and salt for the crust. Press a small amount into the bottom of 4 clear cups or jars.
- Beat cream cheese until smooth. Add Greek yogurt, protein powder, sweetener, lime juice, lime zest, and vanilla. Mix until creamy and fully combined.
- Spoon or pipe the key lime filling over the crust layers, alternating if desired for a layered look.
- Top with sugar-free whipped cream, a sprinkle of crumbs, lime zest, and fresh lime slices.
- Chill for at least 30–60 minutes before serving for best texture.
