Ingredients (Serves 6)

  • 1.5 lbs (680g) ground beef (80-90% lean)
  • 6 cups chopped cabbage
  • 1 medium onion, diced
  • 3 celery stalks, sliced
  • 3 carrots, sliced (or 1 cup for lower carbs)
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • ⅓ cup (35g) unflavored whey protein powder (optional, stirred into broth)
  • Fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven over medium-high heat, brown the ground beef with onion and garlic. Drain excess fat if needed.
  2. Add celery, carrots, cabbage, diced tomatoes, tomato paste, beef broth, paprika, oregano, thyme, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  4. If using, stir in protein powder during the last 5 minutes.
  5. Taste and adjust seasoning. Ladle into bowls and garnish with fresh parsley.
