Ingredients (Makes 4 individual cakes)

  • ½ cup (115g) butter or coconut oil
  • 4 oz (115g) sugar-free dark chocolate or chocolate chips
  • ⅓ cup (65g) allulose or powdered monk fruit sweetener
  • 3 large eggs
  • ⅓ cup (35g) chocolate whey protein powder
  • 3 tbsp (20g) unsweetened cocoa powder
  • 2 tbsp (15g) almond flour
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 425°F (220°C). Generously grease 4 ramekins or oven-safe bowls.
  2. In a microwave-safe bowl, melt butter and sugar-free chocolate together in 20-second intervals, stirring until smooth.
  3. Whisk in sweetener, then add eggs one at a time, mixing well. Stir in vanilla and salt.
  4. Add protein powder, cocoa powder, and almond flour. Mix until smooth (batter will be thick).
  5. Divide batter evenly among the prepared ramekins. Bake 8–12 minutes until the edges are set but the center is still jiggly and molten.
  6. Let cool 1–2 minutes, then carefully run a knife around the edges if needed. Serve immediately in the ramekins with a spoon.
