Ingredients (Serves 6)

  • 1.5 lbs (680g) smoked sausage or kielbasa, sliced into rounds
  • 1 medium head cauliflower, cut into small florets (or 4–5 cups)
  • ½ large head green cabbage, chopped (about 6–8 cups)
  • 1 small onion, diced
  • 3–4 cloves garlic, minced
  • 4 cups (950ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 4 oz (115g) cream cheese, softened
  • 1 cup (100g) shredded cheddar or mozzarella (optional for extra creaminess/protein)
  • 1 tsp Italian seasoning or dried thyme
  • Salt & black pepper to taste
  • 2 tbsp butter or olive oil
  • Fresh parsley or chives for garnish

Instructions

  1. In a large pot or Dutch oven, heat butter over medium heat. Add sausage slices and cook until lightly browned (4–5 minutes). Remove and set aside.
  2. In the same pot, add onion and cook 2–3 minutes until softened. Add garlic and cook 30 seconds.
  3. Add chopped cabbage and cauliflower. Stir to coat and cook 3–4 minutes.
  4. Pour in chicken broth and seasonings. Bring to a boil, then reduce heat and simmer 10–15 minutes until vegetables are tender.
  5. Stir in heavy cream and cream cheese until fully melted and smooth. Add shredded cheese if using.
  6. Return sausage to the pot and simmer 5 more minutes. Adjust seasoning.
  7. Serve hot, garnished with fresh parsley or chives and extra black pepper.
