🍲 How to Make Amish Snow Day Soup
1️⃣ Cook the Bacon
In a large pot or Dutch oven, cook bacon over medium heat until crisp. Remove and set aside, leaving about 1–2 tablespoons of bacon grease in the pot.
2️⃣ Sauté the Onion
Add onion to the pot and cook 3–4 minutes until soft and fragrant.
3️⃣ Simmer the Vegetables
Add potatoes, corn, and chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are fork-tender.
4️⃣ Make It Creamy
In a small saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in milk and cream until smooth and thickened.
5️⃣ Combine & Finish
Stir the cream mixture into the soup. Add salt and pepper. Simmer gently 5 more minutes, stirring often.
6️⃣ Serve Warm
Top with crispy bacon and fresh herbs if desired. Serve hot with plenty of love.
