🍲 How to Make Classic Chicken & Rice Soup
1️⃣ Sauté the Base
Heat oil or butter in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened. Stir in garlic and cook for 30 seconds.
2️⃣ Simmer the Soup
Add chicken, chicken broth, parsley, thyme, pepper, and a pinch of salt. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes until chicken is cooked through.
3️⃣ Shred the Chicken
Remove chicken from the pot, shred with forks, and return it to the soup.
4️⃣ Add the Rice
Stir in rice and simmer uncovered for 15–18 minutes, until rice is tender and the soup thickens slightly.
5️⃣ Taste & Serve
Adjust seasoning as needed. Ladle into bowls and finish with fresh parsley and cracked black pepper.
🧊 Storage & Reheating
- Fridge: Up to 4 days
- Freezer: Freeze without rice, add fresh when reheating
- Add extra broth when warming—it thickens as it sits
This is the kind of soup you make once… and then keep coming back to whenever you need comfort in a bowl 🥣💛
