🛒 Ingredients (Serves 6)
- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil (if needed)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups green cabbage, chopped
- 2 medium carrots, diced
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ cup uncooked rice (white or brown)
- Fresh parsley, chopped (for garnish)
🍲 How to Make Cabbage Roll Soup
1️⃣ Brown the Beef
In a large pot or Dutch oven over medium heat, brown the ground beef until fully cooked. Drain excess grease if needed and set beef aside.
2️⃣ Sauté the Aromatics
In the same pot, add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.
3️⃣ Build the Soup
Add carrots, cabbage, crushed tomatoes, diced tomatoes, tomato paste, broth, paprika, Italian seasoning, salt, and pepper. Stir well.
4️⃣ Add Rice & Simmer
Stir in uncooked rice and browned beef. Bring to a gentle boil, then reduce heat and simmer uncovered for 30–35 minutes, until rice is tender and cabbage is soft.
5️⃣ Taste & Serve
Adjust seasoning if needed. Ladle into bowls and garnish with fresh parsley.
